Ingredients:
300 gr of minced beef meat
500 gr of beef
breadcrumbs
milk
2 eggs
grated ricotta
parsley
1 onion
2 hard-boiled eggs
100 gr of salami in small pieces
Caciocavallo Silano PDO in cubes
butter
a spoon of tomato sauce, salt and ground red pepper.
Preparation:
Mix together the minced beef with the breadcrumbs soaked in milk, the whole eggs, a little pecorino cheese, salt and pepper. Lay down the large slice of beef meat on the table and sprinkle with salt. Spread the mixture then the sliced hard-boiled eggs, salami and caciocavallo silano PDO. Roll the meat on itself and tie it with a string. Brown the onion in a pan with lard and add the meat turning it often. Season with salt and pepper and sprinkle with a little red wine, continue cooking and serve sliced with the sauce.
