Ingredients:
1 kg of tomatoes
250 gr of capicollo or guanciale
1 kg of macaroni pasta
grated ricotta silana
olive oil
100 gr of Caciocavallo Silano PDO
5 eggs
300 gr of minced meat
garlic, parsley
1 onion, spicy red pepper
breadcrumbs
Preparation:
Prepare a sauce with half a glass of oil and a little pork lard, peeled tomatoes, chopped onion and parsley, capicollo or guanciale nuts, a clove of garlic, chopped spicy red pepper. Fry everything and after a while add the tomatoes. Boil macaroni and arrange them in layers to dress with the sauce and sprinkle with grated ricotta, pieces of Caciocavallo Silano PDO, slices of hard-boiled eggs, meatballs (prepared with meat, garlic and parsley minced, breadcrumbs, one whole egg, salt and black pepper). Bake for about twenty minutes.
